I thought sauerkraut was made from cabbage and therefore the question asking about which vegetable and the answer was sauerkraut should have been "cabbage." 😛

Use locally grown organic veggies when possible.
Kimchi is very good. It is also a very good source of nutrients and easy to digest.
Don't forget about prebiotics. Onions are your best source.
After preparing the food, eat it.
I brew my own kombucha and have experimented with many different flavors. It's extremely good for you and your gut.
Homemade Probiotics are always better
You can always make the food tastier by adding spices, herbs or good fats like olive oil and coconut oil!
